Deer Sausage Breakfast Burrito

Sometimes in the kitchen as well as life, the most simple things are the most enjoyable. It doesn’t get much easier than these breakfast burritos. The ease with which they’re made comes in handy as they are the perfect hangover food. The last thing I want to do when hungover is think about anything…or do anything, cooking or otherwise. So these are a great throw together breakfast. If you aren’t lucky enough to have a pack of deer sausage in your freezer, don’t worry. Any kind of sausage will work or even bacon.
Ingredients
- 2 links of deer sausage diced (or whatever sausage you have)
- 2 eggs beaten and ready to scramble
- 1 cup of colby jack cheese
- 1 tablespoon of chopped green onions
- 1 tablespoon of chopped cilantro
- 1 tablespoon of salsa Verde
- 4 large flour tortillas warmed
- Salsa of your choice for topping
Instructions
Cook sausage in a large skillet on medium heat until browned.
Add eggs and scramble. When eggs are almost done add cheese, green onions, cilantro and Verde.
Mix everything well and remove from heat.
Put a scoop of sausage and egg mixture on one side of the tortilla. Roll up and put the seam side of the tortilla down. Repeat with the remaining tortillas.
Top with salsa and enjoy.
