I've always found lasagna to be a very interesting dish. The recipes and methods most everyone uses are always similar but it seems like every dish turns out just slightly different. This makes lasagna a very eccentric dish to cook.

Fried Chicken Biscuits with Sausage Gravy
Biscuits and gravy is easily one of my favorite breakfasts. I think it's the perfect southern comfort breakfast. The fried chicken adds a perfect, juicy crunch (and a few thousand calories).

Cornbread and Andouille Dressing
Out of all the side dishes that are on the table at Thanksgiving, this dressing is far and away my favorite. A perfect compliment to the turkey and more importantly, to the gravy. Also, an absolute must have for your day after sandwich.

Black Eyed Peas
Black Eyed Peas are a New Year's Day tradition in the south. Although the name and recipe can change depending upon where in the south you find yourself (a lot of folks grew up knowing them as Hoppin' John but I always heard them referred to as Black Eyed Peas) the basics are still the same. This dish is one of several (cabbage and greens being a few others) that is supposed to bring you prosperity and good luck during the new year.
