Pimento Cheese

While its origins lie in the Northern part of the country, if you ask just about anyone to name the most iconic southern snack, they will almost always say Pimento Cheese. Pimento cheese got its start as a mixture of cream cheese and pimentos in the early 20th century. Most of the country had forgotten about it by the end of WW2 but in the south it remained and prospered. Thanks in part to Hodges and Ola Herndon who started putting pimento cheese in between two pieces of bread and bringing them to sell at a local golf tournament which happens to be near their home in…Augusta, Georgia. And so the legend was born. Now, folks enjoy Pimento Cheese on sandwiches, pizza, or just by itself with crackers.


Ingredients

  • 8 ounces cream cheese (softened)
  • 2 cups sharp cheddar cheese shredded
  • 1/2 cup mayo (Blue Plate is my favorite)
  • 4 ounce jar of pimentos
  • Pinch of kosher salt
  • Pinch of black pepper
  • Pinch of cayenne pepper
  • A dash or two of hot sauce

Instructions

Combine everything in a stand mixer or alternatively, mix everything by hand until well combined.

Serve immediately or keep in the fridge until ready to serve.
