Goat Cheese Bruschetta

One of my favorite appetizers is bruschetta. I don’t think there is another app out there that combines both amazing flavors and ease to make. Just a few ingredients in a bowl, a little toasted bread, and there you have it.
Bruschetta is also a fantastic way to use up that day old bread. You know I always have to squeeze my “waste not, want not” philosophy into a post. Either French bread or Italian bread is traditional. But you can get creative if need be and you know you don’t necessarily have to add the goat cheese dressing to this recipe but you most certainly should. Why, you ask? Because, goat cheese, I answer.
Ingredients and Instructions
Goat Cheese Dressing
- 1/2 cup goat cheese at room temperature
- 1 tablespoon honey
- Squirt of lemon juice
Combine all ingredients and set aside until ready to use.
Tomato Mixture
- 2 tomatoes chopped (I like Roma tomatoes for this recipe.)
- 1 small red onion diced
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon Killer Seasoning
Combine all ingredients except the bread in a large bowl. Mix well and place in the refrigerator for at least a half hour to allow the flavors to meld.
Bruschetta
- 6 pieces of French or Italian bread cut on bias
- Goat cheese dressing
- Tomato mixture
- Killer Seasoning to sprinkle on top
Preheat oven to 400 degrees Fahrenheit. Put bread slices on baking sheet and toast until golden brown on both sides.
Spread a tablespoon or so of goat cheese dressing on one side of baked bread. Add a scoop of tomato mixture. Finish with a dash of killer Seasoning on top.
